Easy Lasagna Soup Recipe: Quick, Hearty, and Family-Friendly

In our busy household, where four kids with active schedules and a calendar that feels more like air traffic control, quick and nourishing meals are a must. Finding recipes that are both satisfying and simple to prepare is key—especially when I have just a few minutes to get dinner on the table.

A few weeks ago, a friend shared a delicious lasagna soup recipe with me, and after a few tweaks to fit our family’s tastes and time constraints, it’s become a regular on our dinner rotation. It’s hearty, comforting, and the best part? It comes together in no time.

Here’s the recipe in its simplest form—because I know that’s what busy families need most!


Ingredients:

  • 1 lb ground Italian sausage
  • 1 lb ground sirloin or ground turkey
  • 1 tablespoon Italian seasoning
  • 1 scallion, chopped
  • 3 garlic cloves, minced
  • 8 cups chicken stock
  • 1 large jar of spaghetti sauce (we love Rao’s)
  • 1 small can of tomato paste
  • 1/2 lb rigatoni noodles
  • 1 small carton of ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups fresh baby spinach
  • Crusty bread, for serving
  • Olive oil and balsamic vinegar, for dipping

Instructions:

  1. Brown the meats: In a large Dutch oven or soup pot, cook the ground Italian sausage and ground sirloin (or turkey) over medium heat until browned and crumbled, about 5-7 minutes.
  2. Add the aromatics: Stir in the chopped scallion, minced garlic, and Italian seasoning. Cook for another 1-2 minutes, until fragrant.
  3. Add liquids: Pour in the chicken stock, spaghetti sauce, and tomato paste. Stir to combine. Bring the mixture to a boil.
  4. Cook the noodles: Add the rigatoni noodles to the pot. Let it boil for 8-10 minutes or until the noodles are tender and cooked through.
  5. Stir in the cheeses and spinach: Lower the heat to medium. Add the ricotta cheese, shredded mozzarella, and baby spinach. Stir until the cheese is melted and the spinach is wilted.
  6. Serve: Ladle the soup into bowls, and serve with crusty bread on the side, along with a simple olive oil and balsamic vinegar dipping sauce.
