It is a known fact that I don’t like baking. I think for me you have to play by too many rules when baking. You have to get the ingredients just right. You can’t easily sub things in and out. So I stick to cooking where there is room for creativity!
This pie is an easy favorite for my family. While there is no “baking involved,” I still like to serve is with the thought that I “baked” something.
So without further ado, this Chocolate Peanut Butter Dream Pie by Amy Nelson Hannon is THE BEST!
Ingredients:
2 cups chocolate cookie crumbs
8 T (1 Stick) unsalted butter, melted
3/4 cup creamy peanut butter
4 oz (half of an 8 oz package) cream cheese at room temp
1 1/2 cup powdered sugar
1/2 t vanilla extract
1 (8oz) carton Cool Whip, thawed
1 to 2 cups chopped chocolate peanut butter cups
1/4 cup semisweet chocolate chips
1/4 cup milk chocolate chips
2 tablespoons coconut oil
In a small bow, combine the cookie crumbs and melted butter with a fork until the crumbs are moist. Pour the crumbs into a 9 inch pie plate and press into the bottom and up the sides. Refrigerate the crumb crust while you prepare the filling so it firms up a little.
In the bowl of a stand mixer fitted with the paddle attachment, beat the peanut butter filling into the chilled crumb crust. Cover the top with the chopped peanut butter cups.
In a small microwaveable bowl or glass measuring cup, melt the chocolate chips and coconut oil for 20 seconds at a time until smooth, stirring between each interval. Using a small spoon drizzle the melted chocolate all over the top of the pie. Chill for at least one hour before serving.
